Aromatic plants first began to be cultivated in the Mt. Othrys area in the early 1960s, with mountain tea which was planted at locations where the plants grew naturally. This gradually developed into the main occupation for locals, and over the years they expanded on this by cultivating new species of aromatic plants. The products are still picked every year in May and June in the traditional way. They are then carefully cleaned and dried in the shade at ambient temperature to preserve all their scent and flavor.
